We try, improve and test our products - until everything is just right. And only then do we go out into the world.

Alginate consists of seaweed and kelp and becomes an elastic gel when mixed with water. It has a purely plant-based and natural origin. In the production of our Billie Green Vegan Snacks Salami Style Classic and Billie Green Vegan Snacks Salami Style with Chili, we use alginate as the basis for a vegan casing substitute. This allows us to fill, ferment and dry the snacks in a similar way to traditional salami production.
Our products contain only natural flavors of plant origin, which ensure an authentic taste experience. These flavors are also found in many beverages, sweets and baked goods.
Our flavoring is obtained from plant-based raw materials and is important for the delicious taste of our products.
The smoking process is a tried-and-tested method in the meat industry and is just as suitable for our vegan meat alternatives. For our production process, we use the smoke of natural beech hardwood, which provides a pleasant aroma.
The use of colored pepper, i.e. the mixture of green, white and black pepper, offers a variety of flavor nuances and provides a slight spiciness.
Calcium chloride is a salt that is used to maintain the structure and firmness of food. It is harmless to health in small quantities and is also used in tofu and cheese, among other things.
Dextrose is a glucose derived from starch (corn in our recipe) and rounds off the taste of our vegan Billie Green products.
We use finely fractionated pea flour in our Billie Green Vegan Bacon and Billie Green Vegan Ham Cubes. This is rich in protein and stabilizes our products. This filling food is generally used in baking, smoothies and soups.
Euchema algae, a type of red algae, is used as a natural gelling agent. It is also used in the production of various foods such as vegan desserts or in cocoa drinks.
Faba beans, also known as field beans, are rich in vegetable protein and provide a juicy texture in our products. They are also used in vegan burger patties, spreads and snacks.
These color-intensive foods are ideal as so-called coloring foods and are naturally free from additives and preservatives. They give our vegan Billie Green products a meat-like coloration.
Flea seed husks, a natural fiber from the seeds of the psyllium plant, bind liquid and improve the consistency of our products. They can also be found in many muesli mixes, baked goods and as a fiber additive in various other foods.
Psyllium husk fiber is obtained from the husks of psyllium seeds and serves as a swelling and water-soluble fiber that provides binding and volume. It is also used in gluten-free bread, muesli and food supplements.
We use a specially blended spice mix for our Billie Green products. Among other things, colorful pepper, coriander, paprika, carrot and parsnip provide our unique taste.
Spice extract is a concentrated extract of natural spices that provides depth of flavor and spice. It is also used in marinades, broths and savory spreads.
Guar gum, a natural dietary fiber from guar beans, serves as a thickening and binding agent and gives our products the perfect creamy consistency. It is also used in ice cream, sauces and dressings.
Oat fiber, a natural fiber from oats, contributes to satiety and gives our products a pleasant texture. It is also used in breakfast cereals, smoothies and high-fiber breads.
Yeast extract is a natural yeast-based seasoning that gives our products a full-bodied, hearty flavor. It is also used in bouillons, spreads and vegetable broths.
Inulin, a natural dietary fiber from chicory or other plants, is used as a natural dietary fiber. It can also be found in various drinks and as a fiber additive in various foods such as fruit juices, infant formula, muesli bars and more.
Potato protein is a vegetable protein obtained from potatoes. It increases the protein content of our products. It is also used in sports nutrition and gluten-free baked goods.
Potato starch is obtained from cooked and dried potatoes and is used as a natural binding agent and to improve texture. It is also used in puddings, sauces and baked goods.
Garlic belongs to the leek family and is used in the kitchen as a spice and medicinal plant. Its unique aroma rounds off the taste of a wide variety of dishes and recipes.
The fat extracted from coconuts rounds off the sensory properties of our vegan Billie Green salami products and our vegan Billie Green chorizo, creating a delicious taste experience.
Konjac, obtained from the konjac root, is used as a binding agent and for texture. It is an integral part of Asian cuisine and is used, for example, in shirataki noodles.

Corn fiber is a dietary fiber derived from corn that aids digestion and improves texture. It is also used in muesli bars, fiber drinks and baked goods.
Mung bean concentrate is the protein-rich fine flour obtained from the mung bean and contributes to the firmness and bite of our products. It also increases the protein content. It is also used in protein bars, egg alternatives and vegan spreads.
Lecithin is a natural emulsifier that we obtain from soybeans. We use it to create a consistent texture in our vegan raw ham. It is also used in chocolate, baked goods and margarine to improve texture and prevent premature drying out.
Palm fat is a vegetable, heat-resistant fat that provides a stable consistency and a pleasant mouthfeel thanks to its firmness. It is also used in margarine, baked goods and chocolate fillings.
The oil from the seeds of the yellow-flowering plant is definitely a healthy fat of local origin. Rapeseed oil offers an ideal composition of the two essential fatty acids omega 6 and omega 3 in a ratio of two to one. They are essential for the human organism and can only be absorbed through food.
The use of smoked salt in our recipe gives our Billie Green Vegan Bacon and Billie Green Vegan Salami variants their subtle, typical smoked flavor.
Rice flour, made from ground rice, serves as a binding agent in our products and improves the texture. It is also used in pancakes, pastries and as an ingredient in breadcrumbs.
Beetroot juice concentrate gives our products a natural reddish color and adds a slightly earthy note. Beet juice can be enjoyed directly or used in various foods to give them a natural color, e.g. smoothies, baked goods and in plant-based burgers.
Cooking salt is colloquially known simply as salt and chemically consists of sodium chloride. Salt is used as a seasoning for optimum taste and shelf life and also serves as a nutrient for the body. We do not add iodine and therefore only use pure table salt.
Soy protein, obtained from soybeans, provides high-quality vegetable protein and contributes to the meat-like texture. It is also used in tofu, protein bars and protein shakes.

Citrus fiber obtained from juiced lemons is rich in fiber, tasteless and odorless and offers the functional property as a texturizer. It provides stability and support in our vegan Billie Green products.
Onions provide a hearty flavor as part of our recipes and are also full of healthy nutrients and vitamins.
